So one of my many Lenten goals this year revolves around meal planning. I used to be an avid meal planner and then, well, kids happened, and now I’m pretty much always just going with the flow.
Which was fine except that it stressed me (and our budget) out.
So this Lent I decided to dive back into meal planning and I’d love you to come with me. Each Monday, I’ll be posting a “Meal Planning Monday” prompt on my Facebook page. I’ll be listing my meal plan for the week and then on Friday, I’ll post a “Follow Through Friday” so we can discuss how the week of meals went. Weekends seem to be a bit of a crap shoot for us since we often will make spur of the moment plans but if I can get my weekday schedule straight, it will be a huge help. I hope you’ll join me!
I meant to post this at the very beginning of Lent but #realistic expectations I’m just getting to it now. So I’ll post two Meal Planning Mondays to get it all started and we’ll check back in on Friday with a Follow Through Friday post along with my reflections on how the week went and how Lent is going. If you’re curious about how I meal plan, I’ve tried several different methods but I keep coming back to this one and it’s working really well for me again. I’ve actually been skipping Step 2 and using Pinterest to find/organize my recipes a lot and then I just paste the link next to it in my note. I don’t know that it saves much time but I’ve found it’s easier when I’m working off my phone.
I’ve been planning 3-4 meals/week, either Monday or Tuesday (Sunday works really well too if we’re home) I’ll make a bigger batch meal like soup or Spanish rice, etc. that gives me lunch leftovers and then since Wednesday is our busiest day, I build that in as a leftover/snacky night.
We don’t eat meat on Fridays and I don’t plan for Saturdays so that’s usually either a day we visit other people or will have something like frozen pizza (guilty :/) or I get creative with what’s left in the fridge/pantry.
We’re trying to pay down some debt and save up for buying our first house so I’m trying really hard to stick to a budget (I failed pretty badly this week so next week will be super minimal).
